INGREDIENTS

FOR ABOUT 2 PEOPLE
500 g of pumpkin, preferably a sweet variety like Butternut squash
2 tablespoons of extra virgin olive oil (about 30 ml)
Salt and pepper.
Herbs to taste (rosemary, thyme, sage, etc.)

PREPARATION

 

  1. Preheat the air fryer to 200°C (392°F).
  2. In a bowl, mix the extra virgin olive oil, salt, pepper, and chosen herbs.
  3. Cut the pumpkin into slices about 1 cm thick, removing seeds and internal fibers.
  4. Place the pumpkin slices in the bowl with the prepared seasoning and mix well to coat evenly.
  5. Arrange the seasoned pumpkin slices in the air fryer basket, making sure not to overlap them.
  6. Cook at 200°C (392°F) for about 15-20 minutes, flipping the slices halfway through for even browning on both sides.
  7. Serve the roasted pumpkin hot, drizzling with a bit of raw olive oil and optionally adding more fresh herbs for garnish.

 

STORAGE

Once cooked, the roasted pumpkin can be stored in the refrigerator in an airtight container for about 3-4 days. You can reheat it slightly in the oven or air fryer before serving again.
