INGREDIENTS

- 500 g of pumpkin, preferably a sweet variety like Butternut squash
- 2 tablespoons of extra virgin olive oil (about 30 ml)
- Salt and pepper.
- Herbs to taste (rosemary, thyme, sage, etc.)
PREPARATION
- Preheat the air fryer to 200°C (392°F).
- In a bowl, mix the extra virgin olive oil, salt, pepper, and chosen herbs.
- Cut the pumpkin into slices about 1 cm thick, removing seeds and internal fibers.
- Place the pumpkin slices in the bowl with the prepared seasoning and mix well to coat evenly.
- Arrange the seasoned pumpkin slices in the air fryer basket, making sure not to overlap them.
- Cook at 200°C (392°F) for about 15-20 minutes, flipping the slices halfway through for even browning on both sides.
