Welcome to our delightful culinary offering: Fried pastrie, a traditional Italian dessert, reimagined with a modern and healthy twist. By using an air fryer, we have transformed this classic Carnival treat into a lighter version without compromising on taste and crunchiness.
What are Fried pastrie?
Chiacchiere, also known as “bugie” in some Italian regions, are fried pastries made from thin, crispy dough, dusted with powdered sugar. Traditionally prepared during Carnival, they are beloved for their lightness and irresistible flavor.
INGREDIENTS

- 250 g of all-purpose flour
- 30 g of sugar
- 2 medium eggs
- 30 g of melted butter
- 1 teaspoon of baking powder (about 5 g)
- A pinch of salt
- Powdered sugar, to taste, for dusting
- Oil spray (preferably vegetable oil), as needed
PREPARATION
- In a large bowl, sift the flour and add the baking powder, sugar, and a pinch of salt. Mix the dry ingredients well.
- In another bowl, beat the eggs and combine them with the melted butter. Mix until the mixture is smooth and homogeneous.
- Add the egg and butter mixture to the flour mixture and mix until a smooth, uniform dough forms.
- Transfer the dough to a lightly floured surface and roll it out with a rolling pin to a thickness of about 2-3 mm.
- Use a pastry cutter or knife to cut the dough into strips about 3-4 cm wide and 10-15 cm long. Make a cut in the center of each strip and fold the ends to achieve the traditional chiacchiere shape.
- Preheat the air fryer to 180°C (350°F) for about 3-5 minutes.
- Place the chiacchiere in the air fryer basket in a single layer, avoiding overlapping.
- Lightly spray the chiacchiere with oil spray to promote even and crispy cooking.
- Cook at 180°C (350°F) for about 6-8 minutes, flipping the chiacchiere halfway through to ensure even browning.
- Check the cooking: the chiacchiere should be golden and crispy.
- Remove the chiacchiere from the air fryer and place them on a plate lined with paper towels to remove any excess oil.
- Dust the chiacchiere with powdered sugar and serve immediately.
