Fried anchovies

INGREDIENTS

FOR ABOUT 2 PEOPLE
500 g of fresh anchovies
100 g of flour
2 eggs (about 100 g)
Salt to taste (about 5 g)
1 lemon (for garnish)
Seed oil to taste (for the deep fryer, about 1 liter)

PREPARATION

 

  1. Clean the anchovies by removing the head and guts, then rinse them well under running water and dry with paper towels.
  2. In a bowl, beat the eggs with a pinch of salt.
  3. Place the flour on a plate.
  4. Dredge the anchovies in the flour, ensuring they are well coated.
  5. Dip the anchovies in the beaten eggs, allowing any excess to drip off.
  6. Heat the oil in the deep fryer to 180°C (350°F).
  7. Fry the anchovies a few at a time until golden and crispy (about 2-3 minutes per side).
  8. Drain the fried anchovies on paper towels to remove excess oil.
  9. Serve the anchovies hot, garnished with lemon wedges.

 

STORAGE

Fried anchovies are best enjoyed immediately after preparation to savor their crispiness. However, if you have leftovers, you can store them in an airtight container in the refrigerator for up to 1-2 days. To restore their crispiness, reheat them in a preheated oven at 180°C (350°F) for 5-10 minutes.

TIP

For an extra touch, serve the anchovies with homemade tartar sauce or garlic-flavored mayonnaise. This pairing will further enhance the flavors, offering a perfect balance between crispiness and creaminess.
