Eggplants

PRESENTATION
Good morning everyone! Today we are here to delight our palates with a dish that combines taste and lightness: air fryer eggplants.
Eggplants, with their soft flavor and delicate texture, are transformed into a crispy and tasty dish thanks to the magic of the air fryer. This innovative cooking method allows for a crunchy and golden result with much less oil compared to traditional frying.
Our eggplants are sliced thinly, dipped in a light batter or coated with breadcrumbs and spices, and then cooked in the air fryer until perfectly crispy and golden. The result is a perfect balance between the natural flavor of the eggplants and the irresistible crunch of the coating.
Air fryer eggplants are an ideal dish for any occasion: a tasty appetizer, a light side dish, or even a vegetarian main course. Serve them hot, perhaps accompanied by a fresh tomato sauce or a flavored mayonnaise to enhance their taste.
INGREDIENTS
- FOR ABOUT 2 PEOPLE
- 300 g eggplants, sliced thinly
- 50 g flour for batter
- 1 medium egg
- 50 g breadcrumbs
- 1 teaspoon fine salt (about 5 g)
- 1 teaspoon ground black pepper (about 5 g)
- 1 teaspoon sweet paprika (about 5 g)
- 1/2 teaspoon garlic powder (about 2 g)
- Spray oil for air fryer (enough quantity)
PREPARATION
- Preheat the air fryer to 200°C.
- In three separate bowls, prepare the coating: one with flour, one with beaten egg, and one with breadcrumbs mixed with salt, pepper, paprika, and garlic powder.
- Dip the eggplant slices first in the flour, shaking off the excess, then in the beaten egg, and finally in the seasoned breadcrumbs, pressing gently to ensure the coating sticks well.
- Place the breaded eggplants on the air fryer basket, lightly spraying with oil spray.
- Cook the eggplants in the air fryer for about 10-12 minutes, turning them halfway through, until they are golden and crispy.
- Serve the air fryer eggplants hot, perhaps with a fresh sauce or flavored mayonnaise.
