INGREDIENTS

FOR ABOUT 2 PEOPLE
200 grams of coconut flour
100 grams of sugar
2 eggs
50 grams of butter (or coconut oil)
1 teaspoon of baking powder
A pinch of salt

PREPARATION

 

  1. In a bowl, mix the coconut flour with the sugar, baking powder, and salt.
  2. Add the eggs and melted butter (or coconut oil) to the mixture and stir until a smooth dough forms.
  3. With the dough, form uniform-sized balls and slightly flatten them to shape the cookies.
  4. Preheat the air fryer to 160°C (320°F).
  5. Place the cookies in the air fryer basket, leaving some space between them to ensure even cooking.
  6. Cook the cookies at 160°C (320°F) for about 10-12 minutes, until they are golden and crispy on the outside.
  7. Check the cookies towards the end of the cooking time. They should be nicely golden brown.
  8. Once baked, remove the cookies from the air fryer and let them cool on a rack before serving.

 

STORAGE

The cookies keep well at room temperature for about 5-7 days. Ensure the container is well-sealed and stored in a dry place.

TIP

If the dough is too dry, add a bit of milk or another egg to achieve the desired consistency. If it’s too wet, add a little more coconut flour.
